- 3 ripe bananas, mashed
- 2 eggs
- ½ cup melted unsalted butter
- ½ cup maple syrup or honey
- ¼ cup milk
- 1 ½ cups flour (all-purpose or freshly milled if you have it)
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon (optional)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- In a large bowl, mash the bananas until smooth.
- Stir in eggs, melted butter, maple syrup or honey, milk, and vanilla.
- In a separate bowl, mix flour, baking soda, salt, and cinnamon.
- Combine wet and dry ingredients until just mixed (don’t overmix).
- Pour into the loaf pan and bake for 50-60 minutes, or until a knife comes out clean.
- Let cool slightly, slice, and serve warm with butter.
