Directions

Ingredients

  • 3 ripe bananas, mashed
  • 2 eggs
  • ½ cup melted unsalted butter
  • ½ cup maple syrup or honey
  • ¼ cup milk
  • 1 ½ cups flour (all-purpose or freshly milled if you have it)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in eggs, melted butter, maple syrup or honey, milk, and vanilla.
  4. In a separate bowl, mix flour, baking soda, salt, and cinnamon.
  5. Combine wet and dry ingredients until just mixed (don’t overmix).
  6. Pour into the loaf pan and bake for 50-60 minutes, or until a knife comes out clean.
  7. Let cool slightly, slice, and serve warm with butter.
