Directions
Ingredients (serves 4):
- 2 cups raw cow milk
- 1 cup heavy cream (or more milk if you want it lighter)
- 1/4 cup honey
- 1 tsp dried culinary lavender
- 1 tsp vanilla extract
- 2 tsp powdered gelatin (or 1 tbsp if using sheets)
- Pinch of salt
- Optional toppings: fresh berries, edible flowers, or a drizzle of honey
Instructions:
- Bloom the gelatin:
Sprinkle the gelatin over 2–3 tbsp cold milk and let it sit for 5–10 minutes. - Heat the milk & cream:
In a saucepan, combine the remaining milk, cream, honey, lavender, and salt. Warm over medium heat until steaming, not boiling. Stir occasionally. - Infuse flavors:
Remove from heat, cover, and let lavender steep for 10 minutes. Strain out lavender. - Add gelatin:
Stir in the bloomed gelatin until completely dissolved. Add vanilla extract. - Pour & chill:
Pour mixture into ramekins or small glasses. Chill in the fridge for at least 4 hours, or until set. - Serve:
Top with fresh berries, edible flowers, or a honey drizzle for a spring touch.
