Ingredients
- 10-12 eggs
- 1 lb loose sausage or ground beef
- 1-2 bell peppers, diced (any color)
- ½ onion, diced
- 1 cup shredded smoked cheddar cheese
- 8 large tortillas
- Salt & pepper to taste
- Butter for cooking
- Optional: salsa, kefir crema, or fermented veggies for serving
Instructions
- Cook the meat: Brown sausage or beef in a skillet until fully cooked. Set aside.
- Sauté the veggies: In the same pan, cook peppers and onion in a little butter until soft and lightly caramelized.
- Scramble the eggs: Whisk eggs with salt and pepper and cook gently until just set (slightly soft is best so they don’t dry out later).
- Assemble: Warm tortillas. Divide eggs, meat, veggies, and cheese evenly. Roll tightly into burritos.
