    1. Cook the meat: Brown sausage or beef in a skillet until fully cooked. Set aside.
    2. Sauté the veggies: In the same pan, cook peppers and onion in a little butter until soft and lightly caramelized.
    3. Scramble the eggs: Whisk eggs with salt and pepper and cook gently until just set (slightly soft is best so they don’t dry out later).
    4. Assemble: Warm tortillas. Divide eggs, meat, veggies, and cheese evenly. Roll tightly into burritos.
    5. Meal prep:
      • Fridge: store up to 4 days
      • Freezer: wrap in foil or parchment and freeze up to 3 months
