Why We Process Our Chickens on the Farm

When people think about farm-fresh chicken, they often think about how the birds are raised. There is pasture access, quality feed, and humane care. However, one of the most important parts of producing high-quality food happens at the very end of the process: how the birds are handled and processed.

At Little Captain Creek Farm, we’ve chosen to process our chickens right here on the farm because we believe quality, stewardship, and responsibility matter at every stage.

Keeping the Process in Our Hands

By processing on the farm, we’re able to oversee the entire process ourselves from start to finish. That means less stress on the birds, better handling, and a cleaner, fresher final product for the families we serve.

Unlike large-scale conventional systems where birds are loaded onto trucks, transported long distances, and processed in unfamiliar, high-volume facilities, our birds remain in a familiar environment right here on the farm.

Large commercial facilities are designed around speed and efficiency because they have to process extremely high volumes every day. Conventionally processed chicken is also commonly required to go through chemical rinse or cooling baths during processing.

Our approach is intentionally different.

We focus on freshness, careful handling, cleanliness, and attention to detail in a smaller-scale setting where quality standards remain directly in our hands.

How Our Chickens Are Processed

One of the questions we're often asked is how our chickens are processed. We believe our customers deserve to know where their food comes from and how it is handled.

Our chickens spend their lives on pastures with fresh air, sunshine, room to roam, and access to nutritious feed. We work hard to ensure they have a healthy, low-stress life from start to finish.

When processing day arrives, each bird is humanely harvested using industry-accepted methods designed to minimize stress. The birds are then carefully bled, scalded, and plucked to remove the feathers. Afterward, they are cleaned and eviscerated before being thoroughly chilled in an ice-water and salt bath.

Once properly chilled, each chicken is packaged, labeled, and promptly frozen to preserve freshness and quality.

We do not use chemical additives, preservatives, or artificial solutions – just careful handling, clean processing practices, and respect for the animals that help feed our community.

A More Intentional Approach

Processing meat animals is a real part of responsible farming, and we believe it should be approached with care, respect, and transparency.

For us, producing food responsibly means honoring the animal throughout its life and handling every step of the process thoughtfully, not just simply treating food production like an assembly line.

Small-scale processing allows us to move more slowly, pay closer attention, and maintain the standards we believe our customers deserve.

Why Transparency Matters

We know many families today want a closer connection to where their food comes from and how it was produced.

That’s one reason we believe transparency matters so much.

When you purchase directly from a local farm, you deserve to know not only how the animals were raised, but also how the food was handled and processed. Keeping the process on the farm allows us to provide that level of honesty and oversight.

Fresh Chicken Coming Soon

Fresh, never-frozen chicken will be available in the farm store during the week of June 20.

Because this is a small-scale seasonal offering, quantities will be limited and available only while supplies last. We encourage customers to shop early if they’d like to reserve some of the freshest chicken available all season.

This is one of the most anticipated products of the season for a reason. Just extremely fresh, carefully handled, and thoughtfully produced right here on the farm.
