This easy-to-make breakfast burrito features scrambled eggs, creamy avocado, and optional cheddar cheese wrapped in a warm tortilla. Perfect for a quick, protein-packed start to your day!

Ingredients:
- 3 large pasture-raised eggs from Little Captain Creek Farm
- 1 ripe avocado, sliced
- 1/4 cup shredded cheddar cheese (optional, can use raw cheese from Little Captain Creek Farm)
- 1 tablespoon butter
- 1 whole wheat or flour tortilla
- Salt and pepper to taste
- Fresh salsa or hot sauce (optional)
- Fresh cilantro (optional)
Instructions:
- Heat the butter in a skillet over medium heat.
- Crack the eggs into a bowl and whisk them together with a pinch of salt and pepper. Pour the eggs into the skillet and cook, stirring occasionally, until they are scrambled and just set. Remove from heat.
- Warm the tortilla in the skillet or microwave for about 10 seconds.
- Lay the tortilla flat on a plate and layer the scrambled eggs in the center.
- Add sliced avocado on top of the eggs, followed by shredded cheese, fresh salsa, or hot sauce if desired.
- Roll up the tortilla, folding in the sides as you go to make a burrito.
