Farmhouse Ground Chicken Skillet with Garden Veggies
This one-skillet Farmhouse Ground Chicken recipe is a hearty, veggie-packed meal your whole family will love. Directions

Ingredients:

  • 1 lb Little Captain Creek Farm ground chicken
  • 2 tablespoons olive oil or pastured butter
  • yellow onion, diced
  • garlic cloves, minced
  • carrots, diced
  • zucchini, chopped
  • red bell pepper, chopped
  • 1 ½ cups cherry tomatoes, halved (or 1 diced tomato)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt & pepper to taste
  • Optional: A handful of chopped fresh basil or parsley
  • Optional: ½ cup shredded cheese (raw milk cheese if available!)

Instructions:

  1. Sauté the Aromatics:
    In a large cast-iron skillet, heat olive oil over medium heat. Add onion and carrots. Cook for 5 minutes, until softened. Stir in garlic and cook for 1 more minute.
  2. Brown the Chicken:
    Add ground chicken to the skillet. Season with salt, pepper, thyme, and paprika. Cook, breaking it apart with a spatula, until fully browned (about 6–8 minutes).
  3. Add the Veggies:
    Stir in zucchini, bell pepper, and cherry tomatoes. Cook another 7–10 minutes, until vegetables are tender and flavors meld.
  4. Finish & Serve:
    Taste and adjust seasoning. Sprinkle with fresh herbs and shredded cheese, if using. Serve warm over rice, quinoa, or roasted potatoes—or enjoy on its own!
