Ingredients:
- 1 lb Little Captain Creek Farm ground chicken
- 2 tablespoons olive oil or pastured butter
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 ½ cups cherry tomatoes, halved (or 1 diced tomato)
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt & pepper to taste
- Optional: A handful of chopped fresh basil or parsley
- Optional: ½ cup shredded cheese (raw milk cheese if available!)
Instructions:
- Sauté the Aromatics:
In a large cast-iron skillet, heat olive oil over medium heat. Add onion and carrots. Cook for 5 minutes, until softened. Stir in garlic and cook for 1 more minute. - Brown the Chicken:
Add ground chicken to the skillet. Season with salt, pepper, thyme, and paprika. Cook, breaking it apart with a spatula, until fully browned (about 6–8 minutes). - Add the Veggies:
Stir in zucchini, bell pepper, and cherry tomatoes. Cook another 7–10 minutes, until vegetables are tender and flavors meld. - Finish & Serve:
Taste and adjust seasoning. Sprinkle with fresh herbs and shredded cheese, if using. Serve warm over rice, quinoa, or roasted potatoes—or enjoy on its own!
