This easy one-pan chicken sausage and veggie roast features Little Captain Creek Farm’s Chicken Rope Sausage and is perfect for busy weeknights. Tossed with buttery ghee, fresh vegetables, and simple herbs, everything roasts together on a single sheet pan for a flavorful, no-fuss dinner with minimal cleanup.

Directions
Ingredients:
- 1 lb Little Captain Creek Farm Chicken Rope Sausage, cut into 2-inch chunks
- 1 lb baby potatoes, halved
- 1 red bell pepper, sliced
- 1 zucchini or yellow squash, sliced
- 1 small red onion, cut into wedges
- 2 tbsp ghee, melted
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- Salt & black pepper to taste
- Optional: fresh parsley or a drizzle of balsamic glaze to finish
Instructions:
- Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper for easy cleanup.
- Toss everything together:
On the sheet pan, combine potatoes, sausage, bell pepper, zucchini, and onion. Drizzle with melted ghee, then sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss everything together right on the pan to coat evenly. - Roast for 30–35 minutes, flipping once halfway through, until the potatoes are golden and the sausage is sizzling and slightly browned.
- Serve hot right off the pan. Garnish with chopped parsley or a drizzle of balsamic glaze if desired.
