- 2 lbs stew beef
- 2 tablespoons butter
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 4 carrots, sliced
- 3-4 potatoes, diced
- 2 celery stalks, sliced
- 1 tablespoon tomato paste (optional)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
Instructions
- In a large pot or Dutch oven, warm the butter over medium heat. Brown the beef in batches, seasoning lightly with salt and pepper.
- Add the chopped onion and cook until softened. Stir in garlic and cook briefly.
- Pour in the bone broth, scraping up any browned bits from the bottom of the pot. Add tomato paste if using.
- Add carrots, potatoes, celery, thyme, and bay leaf.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer slowly for 2–3 hours, until the beef is tender and the flavors are well developed.
- Taste and adjust seasoning. Remove bay leaf before serving.
